Chow mein denumeste taiteii prajiti, termenul acesta fiind o corupere britanica a expresiei chāu-mèing, folosita in Taishan. Dialectul din Taishan era vorbit de unii dintre primii emigranti sositi in SUA. Acest preparat este popular in diaspora chinezeasca si apare in meniul tuturor restaurantelor.
In chineza mandarina “chow” inseamna “prajit”, iar “mein” inseamna “taitei”.Preparare: 15 minute / Timp pentru gatit: 30 minute / Portii: 4
Ingrediente
250 g de taitei cu ou chinezesti, uscati
250 g de piept de pui dezosat, fara peiel sau
baveta bica (flank steak), foliate subtire
1 cana te morcov feliat
1 cana de tulpina de teilna feliata
1 cana de ardei gras feliat
1 cana muguri proaspeti de fasole mung
1/2 cana de ceapa verde feliata
3 catei de usturoi, zdrobiti
1 lingura de ulei de alune
2 linguri de sos de soia
2 linguri de sos de stridii
1 lingura de zahar
1 lingura de amidon de porumb
1/4 lingurita de piper negru
1/4 cana de supa de pui
1 lingura de ulei de susan.
Instructiuni
1. Se pun taiteii in apa
clocotita si se rehidrateaza 3 minute. Se scurg si se racesc sub jet de apa
rece, ca sa se opreasca procesul de gatire. Se stropesc apoi cu putin ulei de
susan si se amesteca. Astfel nu se vor lipi intre ei, iar uleiul de susan le da
un gust deosebit.
2. Se desface amidonul cu putin sos de soia, intr-un castronel; se adauga sosul de soia, zaharul, piperul negru si supa de pui. Se amesteca bine si se pune deoparte.
3. Se incinge un wok la flacara
medie. Se adauga uleiul de arahide si se incinge bine.
4. Dupa ce acesta incepe sa
fumege putin, se adauga carnea si se gateste la foc foarte iute 1 minut,
amestecand, ca sa se rumeneasca uniform. Se scoate din wok si se pune deoparte.
5. Se adauga in wok usturoiul și
se gateste timp de 30 de secunde până când incepe sa isi elibereze aroma.
6. Se adaugă morcovii, țelina și
ardeiul gras și se prăjesc timp de 3-4 minute până când legumele incep sa se
inmoaie.
7. Se adăuga mugurii de fasole
și ceapa verde și segatesc încă 1-2 minute.
8. Se adăugați in wok tăițeii
fierți și sosul și amestecați pentru a se combina.
9. Se adauga carnea prajita se
se incorporeaza in amestecul de taitei sei legume.
10. Sie gateste inca 2-3 minute
pana cand sosul s-a ingrosat si a acoperit toate ingredientele.
11. Se stropeste cu ulei de susan (opțional) și se serveste
fierbinte.

Ingredients
8 oz. dried
Chinese egg noodles
1/2 lb. boneless chicken breast or flank
steak, sliced thinly
1 cup sliced carrots
1 cup sliced celery
1 cup sliced bell peppers
1 cup bean sprouts
1/2 cup sliced green onions
3 cloves garlic, minced
1 tbsp. vegetable oil
2 tbsp. soy sauce
2 tbsp. oyster sauce
1 tbsp. sugar
1 tbsp. cornstarch
1/4 tsp. black pepper
1/4 cup chicken broth
1 tbsp. sesame oil (optional)
Directions
1. Cook the egg noodles
according to package instructions until they are al dente. Drain and set aside.
2. In a bowl, whisk together the
soy sauce, oyster sauce, sugar, cornstarch, black pepper, and chicken broth.
Set aside.
3. Heat a wok or a large frying
pan over high heat. Add the vegetable oil and swirl to coat the pan.
4. Add the chicken or beef and
stir-fry for 2-3 minutes until cooked through. Remove from the pan and set
aside.
5. Add the garlic to the pan and
stir-fry for 30 seconds until fragrant.
6. Add the carrots, celery, and bell
peppers and stir-fry for 3-4 minutes until the vegetables are tender.
7. Add the bean sprouts and
green onions to the pan and stir-fry for another 1-2 minutes.
8. Add the cooked noodles and
the sauce to the pan and toss to combine.
9. Return the chicken or beef to
the pan and toss to combine with the noodles and vegetables.
10. Cook for an additional 2-3
minutes until the sauce has thickened and coated all the ingredients.
11. Drizzle with sesame oil
(optional) and serve hot.
